I may have found the easiest, most flavorful, overnight oats recipe I’ve ever had. It’s so easy there’s no excuse but to get some more fiber in your diet.
Can I get an Amen? 🙌🏾😆
Fiber in the morning helps stabilize your blood sugar, so you avoid energy crashes and stay full longer. It also supports healthy digestion and gut function, helping your body feel more balanced and steady as you start your day.

Let’s first give credit where credit is due. I found this recipe in the Sweet Potato Soup Vegan cookbook. Ms. Claiborn does a great job adding flavor to vegan recipes. Don’t let the “vegan” word steer you away. It’s truly about eating more plants, not a lifestyle.
This specific overnight oats I do not eat cold. In the morning, I transfer the mixture to a bowl and warm it up in the microwave. It’s soooooo good!!
⚠️ Warning… when warming it up the, apple smells so delicious, you may get others wanting a bite! Which is exactly what happened when I warmed it up at work haha!!

🍎 Pro Tips (Not Required but Helpful)
- Consider using a chopper to chop the apples. It just gives the dish a bit more delight! Of course this is NOT required, only if you want to be fancy!

- Mason Jars are my best friend! The best price right now seems to be Ace Hardware… I used them over and over.

🍎 Rooted Kitchen Apple Cinnamon Overnight Oats
(Sweet Potato Soul Inspired – Fresh + Nourishing Version)
🛒 Ingredients (1 Serving)
- ½ cup rolled oats
- ½ apple, fresh and chopped
- 1–2 tbsp ground flaxseed
- 1 tbsp pumpkin seeds (for added protein + crunch)
- 1–2 tsp maple syrup
- Pinch of salt
- 1 cup coconut milk
🍂 Spice Options
Option 1: Simple
- ½–1 tsp apple pie seasoning
Option 2: Homemade Apple Pie Blend
- ½ tsp cinnamon
- Pinch of nutmeg
- Pinch of allspice
- Tiny pinch of cloves
👩🏽🍳 Instructions
- Add oats, chopped apples, flaxseed, pumpkin seeds, sweetener, salt, and spices to a jar
- Pour in coconut milk and stir well
- Cover and refrigerate overnight (or at least 4–6 hours)
- In the morning, stir and add a splash of coconut milk if needed for texture
✨ Optional Add-Ons
- Chopped walnuts or pecans
- Spoon of yogurt (for creaminess + protein)
- Extra apples on top
- Drizzle of almond or cashew butter
💡 Rooted Tip
Coconut milk gives this a slightly creamy, almost dessert-like feel especially with the apple pie spices. It’s a simple upgrade that makes this feel more indulgent while still being grounded and nourishing.
