A week does not go by that I don’t hear someone say…..
“Eating healthy costs too much money”
I totally get this can be the case, BUT know it is possible to eat healthy on a budget!
Challenge accepted 😏
One of the community Members in our Teaching Kitchen challenged me to go to their neighborhood Dollar Tree and “haul”my top recommendations. This is part 1. I found far more than I could write about in one post!
Lemon squeezer $1.25
Easily top pick. I love zesty flavor of lemon and limes in homemade salad dressings, atop of fish, or in cracker dips yum! Definitely squeezed on veggies too. These come in handy!

Whole Grain Triscuits $3.75
Definitely watch the salt content, on this one but I love these with avocado dip for an afternoon snack! Fiber power!

Popcorn 🍿 $1.25
Popcorn is always a great snack. We enjoy family movie nights on the weekend, so popcorn is often on the menu.

Tuna $1.25
I learned a hack to swap mayo in tuna salad sandwich for avocado 🥑! Elisa Bauer of the website “Simply Recipes” provides these details:
- Add some red onion
- Lemon zest and juice
- Sprinkle with the green of cilantro or parsley
- Put the avocado tuna salad between two pieces of toast and you have a rather perfect tuna salad sandwich with the lovely addition of avocado and without any mayonnaise.

And so it begins… answering the challenge I was given. I picked up a few more items, we’ll save for later. In the meantime, scoop up these items the next time the Dollar Tree is on your to do list.
In peace,
J
